For my first attempt of actually giving AI a fair chance, I'm building a game engine in Rust. Before you ask why, because why not. An engine without all the unnecessary BS with the things I've always wanted. Native multi-threading (scripts), fluid simulation, day/night cycles, weather, global snow/wetness coverage, etc. All the cool things you'd typically have to build/buy later. Seems like a good way to give AI a run for its money.
